Pasta – any long strand pasta of your preference; I opted for linguine.

You may substitute with half and half (single cream), but be aware that your sauce will be thinner and will require more time to thicken.

How to Prepare Creamy Shrimp Pasta
Begin by boiling water in a medium-sized saucepan and adding salt. Introduce your pasta and cook it according to the package instructions until it reaches al dente. Once cooked, reserve 1 cup of the pasta water and drain the remaining pasta.
In a skillet over medium heat, melt the butter and incorporate olive oil. Sauté the shrimp for one minute, then season with salt, pepper, and Old Bay Seasoning or paprika if desired.

Continue cooking the shrimp until it turns pink. If you are concerned about overcooking, do this in batches. Transfer the shrimp to a plate and set aside.

In the same skillet, melt butter and add garlic, cooking for 30 seconds or until fragrant. Pour in the heavy cream and use a spatula to deglaze the pan.

However, it is advisable to completely thaw the shrimp prior to cooking to ensure it is as dry as possible for optimal results.

Remember to reserve about a cup of the pasta cooking water; it is quite starchy and excellent for loosening the sauce. You will likely need much less than a cup, but to be cautious, I always reserve one cup and drain the excess.

Reserve a ¼ cup of pasta water before draining and set aside. Drain pasta and return to pot.

Drizzle pasta with the tsp of extra olive oil and set aside while cooking the shrimp. (You could use a little butter instead of oil if you prefer - it’s just to prevent pasta from clumping together while it sits while the shrimp cook)

Heat olive oil and 2 tablespoons of butter in a large pan or skillet on medium heat. Add garlic, shallots and chili flakes if using and sauté until fragrant and shallots are softened  and translucent, just a couple of minutes.

Add the shrimp, season with salt and pepper to taste and sauté for 1-2 minutes on one side until they just start turning pink and then flip. 

Pour in wine or broth and bring to a simmer for 1-2 minutes or until wine reduces by about half and the shrimp is cooked through (do not over cook shrimp)

Stir in the remaining butter, lemon juice, lemon zest and parsley and take off heat immediately.

Add the pasta to the pan and gently toss with the shrimp and buttery sauce. Feel free to add a bit of the reserved pasta water if needed to thin the sauce out. Check for seasoning and adjust if more salt and pepper is needed.

  • 2 tablespoons butter (divided)

  • ¼ teaspoon black pepper

 1.Boil pasta in water till tender, save 1 cup of pasta water for use later. I always put some oil, salt, and fresh herbs in with my pasta when I boil it. Drain and set aside when done.

3.Melt butter over medium heat. Add shrimp. 

 4.Let cook till a little pink and starting to curl. Then add garlic. 
 
5.Cook 5-7 min., add oil. Continue to stir till shrimp is pink and curled. 
 
6.Add pasta to skillet. Add seasonings. Add just enough saved pasta water till it is not dry but not swimming in liquid either. Depending on amount of pasta this requires 1/2 the cup or all of it. Start with adding 1/4 of it then work up from there.
